- 1 tablespoon of vegetable oil (https://afstro.com/products?categories%5B%5D=&q=vegetable+oil)
- 2 cups of chicken or vegetable broth
- 1 cup of canned diced tomatoes

Instructions:
In a large saucepan, heat the vegetable oil over medium heat. Add the onions, garlic, and red pepper, and cook until the vegetables are soft, about 5 minutes.
Stir in the tomato paste and cook for another minute.
Add the rice, stirring to coat it in the oil and tomato mixture.
Pour in the broth, diced tomatoes, thyme, oregano, cumin, cayenne pepper, salt, and black pepper. Stir to combine.
Bring the mixture to a boil, then reduce the heat to low and cover the saucepan. Simmer the jollof for 20-25 minutes, or until the rice is tender and the liquid has been absorbed.
Remove the saucepan from the heat and let it sit for a few minutes to allow the flavors to meld.
Serve the jollof hot, with your choice of meat or vegetables on the side.
Enjoy your delicious jollof!
